Coffeelipe is Juan Felipe Restrepo's brand for the development of advanced fermentation protocols using cherries from different farms and regions of Colombia. It is a modern processing center with a laboratory, bioreactors, and controlled drying systems. After seven years of research and over 1000 cup profiles, and in the face of climate challenges, a line of subtle flavored coffees using osmotically dehydrated fruit developed with a Colombian university was introduced.
Manual selection and flotation of ripe cherries. Dry fermentation in cherry for 12 hours, pulping and wet fermentation in water for 12 hours. Washing and drying in marquesinas for 10 days. During drying, a minimal amount of osmotically dehydrated fruit diluted in water is added for a controlled infusion.
