La Reserva is a 380-hectare farm reclaimed by Juan Felipe in 2018, after being abandoned for three years. With a vision focused on quality, innovation, and sustainability, the farm today cultivates more than 21 exotic coffee varieties.
In addition to producing high-quality coffees, La Reserva boasts a protected natural area that helps preserve the local ecosystem. This reserve is home to endangered species such as the Andean bear and protects important water resources for the families on the farm and the nearby town.
For this Honey lot, the cherries are harvested at their optimal ripeness and undergo flotation sorting. Afterwards, they ferment in cherry inside sacks for 36 hours. The coffee is then de-pulped and fermented again anaerobically in 200-liter containers for 96 hours. Finally, it is dried for approximately 8 days.
A coffee that combines careful production, controlled fermentation, and a farm where environmental conservation is an essential part of the project.
