In Cafénor's commercialization project, "Harvest Partners," they work with farms located between 1,150 and 1,350 meters of altitude, mainly with Pacas and Bourbon varieties, with which they have collaborated for years in the field and in cupping.
Based on this experience, they have developed a clean, consistent, and reliable washed coffee, with 83+ and 84+ point profiles, designed to be replicable harvest after harvest. These coffees are highly sought after and represent a solid opportunity for producers. The cherries are harvested at their optimal point and then pulped, fermented, and dried in the shade, applying processes typical of higher-scoring coffees. To add more complexity, Cafénor selects complementary farms that enrich the final coffee profile.
